The eels feature beautiful marbling, tender flesh and natural sweetness, prepared in four distinctive styles at $29.80 each. The festival runs from now till 31 October 2026.
One of the festival highlights is the Live Eel soup, which comes with eel pieces, ginger, red chili and broth in a traditional presentation that emphasizes freshness. The dish showcases the natural sweetness and tender texture characteristic of the Shunde freshwater eels.
